This takes salmon to a whole new level!
I lived in the Pacific Northwest for the past 8 years, and I was always looking for new ways to prepare salmon. Poached salmon with a Hollandaise sauce is WONDERFUL (& easy!). Here's my recommendation for poaching liquid:
2 Quarts water
3 cups dry white wine
2/3 cup fresh lemon juice
2 small onions, quartered
3 carrots, chopped
3 sprigs fresh parsley
1 tsp. dried thyme
1 bay leaf
2 tsp. salt
1 1/2 tsp. black peppercorns, cracked
Combine all ingredients in the poacher & bring to a boil with salmon (whole or pieces) in place. Reduce heat to a very low simmer for about 1 hour. Lift fish & serve with Hollandaise sauce.

I purchased this product for my mother who has used it at least once a week since its delivery and has had nothing but good things to say about the quality of the product. She has used the vessel for sea food as well as ribs. Ribs you say? Yup. It's a great pan to put several slabs of ribs into, put the cover on, and slow cook all day in the oven. The internal meat rack prevents the ribs from sitting in fat and allows the chef to coat the meat continuously with his or her own secret sauce throughout the cooking cycle. Bottom line up front; this fish poacher is well made and can be used for many other things besides a luxury steam bath for dead fish.
